Abstract (eng)
Since dietary trends such as veganism and vegetarianism are gaining in popularity, legumes are giving a comeback. In addition, the United Nations have declared the year 2016 as the international year of legumes, which supports that these profitable cultivated plants will once again reach the center of attention. Within the framework of the EU project "Big Picnic", that deals with the international food supply of world’s population, they also attempt to address adolescents. Within this setting, this thesis has been created. It focuses on legumes from different angles such as sustainable agriculture, nutritional physiology, diversity and botany. On the one hand, the content is provided on a scientific level and on the other hand, some topics were reformulated and broken down in a way that they can also be used in the classroom. Each of the above-mentioned areas can be found in the teaching material section and were adapted to the level of 10 to 14 year-old kids. These materials are intended to motivate teachers to include legumes in the context of healthy nutrition as well as sustainability and to share this knowledge with students.
